Choices

     
The gym I have a membership at is terrible but at least it's exercise. My membership is up in February and I'm outta there. I was excited to go though yesterday morning. First of all going to the gym meant I got to leave the squirrel with the husband. I got an hour of freedom. Secondly, I got to wear my new fleece!

Since I've become a "runner" my husband has been spoiling me. You see not only am I running for myself but I'm fullfilling this life long dream of his. He has always wanted me to run with him. I'm not opposed to his spoiling. Who would be? He said I needed a nice jacket and pants to run in when it gets colder. $50 fleece? NO PROBLEM! I told him I could easily get one at Old Navy for like $15 but he said he didn't mind spending the money on something nicer. Oooookay babe. So I got to wear my cute new $50 fleece to the gym!

My class started at 8 so I had a banana before I went.


When I got home I was starving. That's what happens when you work out hard. You get hungry! I came up with this delicious breakfast sandwich recipe.

1/2 cup egg whites from the carton
1/4 cup chopped spinach
1 large basil leaf chopped
1 tablespoon feta cheese
An Arnold sandwich thin
Lots of salt and pepper

Let me first say I used to eat egg beaters but then I compared the ingredient list between EB and egg whites and was shocked. I didn't know what half the stuff was in EB. The only thing on the egg whites ingredient list is 100% egg whites.

Anyways... I pammed the pan and cooked the egg whites. It was my first time using the egg whites so it scared me a little. They seemed really watery. Within minutes they cooked up just like scrambled eggs. I added the salt and pepper, chopped spinach, basil, and feta. I put a lid over it to wilt the spinach and heat the feta.

Then I piled everything on a sandwich thin. Look how pretty! It was so good. I inhaled it. Delish. Enough said.


Around lunch time the husband needed to go up to the base so I tagged along. I didn't have time to make anything so I grabbed a Luna Bar for lunch. Not the best choice nutritionally but we were in a hurry and I like them (smores is my favorite). These little buggers are 70% organic, low in calories for a bar, and really tasty. I keep a stock of them at home for days like yesterday. Was it a smart decision to only have a 180 calorie bar for lunch. No. I was hungry again before I even finished it.

By the time we got home we had to get ready to go to dinner. It was my husband's grandmother's birthday so everyone met at Ruby Tuesdays for dinner to celebrate. I, the person really trying to be healthy, looked up their menu online. I decided on grilled chicken, brocolli, and white cheddar mashed potatoes. All totaling about 600-700 calories. I also had a bite of the husbands lobster mac and cheese so it's probably more towards the 700 end.


Today is a big day... My mother-in-law is getting married at 3. Then we are headed to the zoo tomorrow morning! We've got lots of fun stuff going on!
