Biscotti to Dog Treats

Since I knew what was planned for the day I ate light for the most part.

Breakfast was 1 cup of plain yogurt with a sprinkle of granola, a drizzle of honey, and half the squirrels banana. I love this for breakfast... So refreshing. It doesn't keep me full though.

Today was grocery day. I hate grocery day. I used to love it because the closest grocery store isn't too far. Now I shop at the commissary (military grocery store) and it's a 30 minute drive.

I snapped this cute pic of the squirrel right before we headed to the store.

I prepared myself for chaos this morning at the grocery store but surprisingly everything was really quiet and there was hardly anyone there.

The highlight of my trip?

This sauce. FINALLY. I found a sauce that doesn't have high fructose corn syrup. All natural ingredients and surprisingly delicious. It really might be bone suckin'.....

I lasted my whole grocery trip with no snack so when we got home I was STARVIN'. I had a ham and swiss on a sandwich thin with a little bit of grainy mustard for lunch. Plus spinach and a big scoop of Sabra.

After lunch I dove into some holiday baking... The reason why I was eating light. I made so much stuff it's unbelievable. From biscotti to dog treats. I pretty much baked until the hubs got home.
While I baked the squirrel and Gus Gus did some lovin'. I swear he's her best friend.

Another reason I ate light is because I had a heavy dinner planned. Spaghetti and meatballs.
I started with homemade breadcrumbs. I never buy breadcrumbs anymore because I found this really neat way to do it. All I did was take 2 slices of 12 grain bread. Really whatever bread you normally use. Pop them in the oven at 200 degrees for about an hour. It will become really stale. Toss them in a food processor with whatever seasonings you like. I did dried basil, oregano, salt, and pepper.
There you have it... Fresh multigrain breadcrumbs! Just keep them in an airtight container. Mine was an old almond butter jar.

2 slices of bread made about a half a cup of breadcrumbs. I just added that to 1lb of lean ground beef and an egg, rolled them into balls, covered them in 2 jars of spaghetti sauce...

and turned the crockpot on low...

Tada! Dinner... Meatballs with whole wheat pasta. It was delicious.
We don't eat red meat often anymore. It's amazing that I've turned my carnivore husband into a veggie lover. When we do eat red meat it's always with meatballs or chili. We've tried alternatives and it's just not as good. A little bit every once in awhile won't hurt :)
The husband has a BIG flight tomorrow... Something he gets graded on so he has been working all evening.

I just got the squirrel to bed and I'm off to finish some more Christmas stuff... Can you believe Christmas is just 3 days away? Where did the year go?
