The squirrel and I were in a hurry this morning to make it to fit for fun. Fit for fun is every mom's dream. 4,000 square feet of baby proof space filled toddler toys. This... is fit for fun...
If you aren't a mom already you won't understand... It's ok though. Your time will come.The squirrel adores this place. It's $4 to get in. I'd pay $20. Not kidding. She hasn't been since she started walking so she really had a blast this time. Plus we took Nana Banana.
No matter who we take she always cons them into sliding her down the slide. Huh Aunt Kellee! This time she got Nana to do it...
There is no lunch picture because I felt really guilty eating it and was a tad embarassed to post it. I went to lunch with the squirrel, my mom, and dad. I have tried and tried to get something healthy at a Mexican restaurant but it really seems impossible. Especially when they sit the basket of hot chips right in front of you. I had 2 soft chicken tacos and half the squirrel's quesadilla. I don't normally buy much cheese for the house because it's my weakness. Your chocolate is my cheese... I love love love that Mexican white cheese. So... [insert picture here of me picking every single cheese shred off my plate]

I did get a 2ish mile run in today... Hopefully that cancelled out some of that cheesy goodness...
Amazingly I was hungry for dinner when the time came around. Since the husband was on duty I decided to make something I've been dying to try. And I'm SO glad I did. This is my version of fancy pizza. Not sure what I'll call this creation yet but it came from those gorganzola, pear, walnut salads.
This is what I had for dinner...
First... I caramelized about a half an onion with a tsp of olive oil, a tsp of fresh rosemary, and a tsp of fresh basil. To caramelize them you just cook them on medium/low for awhile. It took mine about 20 minutes.While they were cooking I toasted a whole grain tortilla and rubbed it with fresh garlic (the garlic almost melts like butter). Then I toasted a tablespoon of walnuts and about a quarter of a pear in a pan.
I topped the tortilla with the onions, 2 tablespoons of blue cheese, walnuts, and pears. Then I threw it back in the oven.
I had a salad on the side. O-M-G. You've gotta try this.

The melted blue cheese was so creamy and the sweetness of the pears helped balance that bitterness of the the cheese. Sorry didn't mean to go Food Network on ya but it was that good. I wouldn't have changed a thing.
Well it's time for bed here in our house... Only 2 more days till the weekend!
