The Lean Ogre

     
Today I knew I had to eat light... I had a good dinner planned.

Breakfast- 1/2cup plain yogurt, strawberries, 3/4 a banana, and a sprinkle of my new
cereal. Really good and refreshing.



I headed to the gym right after breakfast. I dropped the squirrel off at the kidcare which was SAD. I put her down and she turned around, made a pouty face, and ran to me with her arms up. BOO. I was hoping she'd be ok. I had to just walk away. I rushed through 2 miles on the treadmill and an upper body workout on the machines. When I went to pick her up she was smiling and playing with another kiddo. Brat.

On my way home I had a mocha chip
Balance Bar.

Verdict? Good but SO sweet! I can't believe I'm going to complain about this but it was so chocolatey. Not what I was expecting.

We didn't do much all day. The squirrel is cutting a back molar so she's been kinda crabby... In fear of her melting down I haven't been taking her many places lately.

For lunch I made what people call a "Green Monster". In my case it's going to be a Lean Ogre.

I used a giant handful of spinach, about a half a cup of frozen banana, and a cup of milk.


I gave it a whirl in the blender and came up with this...

Since it was green and nasty looking I thought this glass was appropriate...

My lean ogre was delicious. Honestly I couldn't even taste the spinach. It was really good and refreshing.
Oh I also had 1/2 cup of cottage cheese, a kiwi, a sprinkle of almonds and coconut. Good stuff.

Yesterday I found some whole wheat lasagna noodles at the commissary so I decided to give lasagna a try for dinner.
I used a half a pound of the leanest beef I could find and a jar of spaghetti sauce. So if you use a pound then use 2 jars of sauce. I let that cook in the crockpot all day on low. You've got to try this. I have to use red meat in my lasagna so I get the leanest kind. Since it doesn't have much fat it can really dry out. If you cook it in the crockpot it just absorbs all that sauce and literally falls apart.
For the filling I mixed a cup of fat free cottage cheese, an egg, and 1/4 cup of fresh parmesan. Then I layered noodles, cheese, and sauce. For the top I just sprinkled part-skim mozzarella all over it.

It was really good... The squirrel approved!
We also had side salads. Mine had walnuts, blue cheese, and maple fig dressing.
And then a glass of Riesling... My new favorite.

Tomorrow is a busy day... Gym early, Christmas shopping, and then dinner with the two best girls in the world!
