This is usually the most depressing part of the year for me. All the excitement from Christmas is over and we all go back to the daily grind. This year I was looking forward to getting back to some normalacy. Now that tomorrow is the day everything goes back to normal I'm bumming.
To cheer myself up I declared today pancake day. I made a bajillion pancakes from Bob's Red Mill pancake mix.
For the mix ins I did ham, cheddar, and broccoli.
For the actual egg part I did 3 whole eggs, 1/4 cup whole mik, and some salt and pepper.
This made 6 frittatas.

Had they been for me I would have completely changed this recipe but babies need fat and calories. I wish I was a baby...
I had a nibble to make sure they were ok. They were SO good. Can't wait to make them for myself. The squirrel loved them.

Midafternoon I had a KIND bar. It was exactly what a granola bar should be. Chewy, crunchy, sweet, and salty.
For some reason all of my dinner pictures were deleted. Either my computer has a mind of his own or I'm losing my mind. Neither would surprise me.

I baked these bad boys at 350 degrees for about 20 minutes.
Lunch was a grilled ham, brie, grainy mustard, and apple sandwich. Plus spinach and hummus.
What is wrong with this kid?!

We made homemade pizza for dinner and I had a salad with it.
Have any of y'all tried the P90X workout? The husband and I have done 2 days of it. I'm not a fan. It's ridiculously hard and the guy on the video is annoying. Sorry I've been pretty anti-exercise lately. What's my deal? I guess it was the lack of exercise during the holidays. I have got to get back into it... Starting tomorrow with a class at the gym.

lol aww Kristen I'd like to be a baby too. Or at least need to eat like one, I think I'd be pretty good at that part :)
I'm kinda bummed about the whole Holiday season being over with too. So much buildup, then its gone in a flash!! Its hard to get back to normal.
Have fun at the gym tomorrow though! Make those endorphins up your mood :)

Being a stay at home Mom is HARD work! In Canada we get 1yr mat leaves which started by the time I had my son. Being home with the 2 kids for that time was probably the hardest work I've ever done. I have full respect for all you SAHM!!!
Pancakes seem like the perfect way to ease out of vacation mode. And those fritattas! Mmm.
I have p90x and I've only done it a few times. I wasnt a huge fan either. It was more lifting and not enough cardio for me personally. I'm not looking to get jacked and bulky. I think i will use it as an at home workout when I can't make it to the gym for whatever reason and/or its too cold to run outside.
lol, she's so cute!! I wish I could sit in a high chair and be served lunch, and then pass out in the middle of the day. haha, ok, maybe not the high chair part :)
I love that you froze your pancakes, that's a great idea. I had not thought about doing that.
I also LOVE Kind bars. Why the heck do they have to be so darn expensive?!
Your daughter is adorable! I did the P90x yoga workout and it was pretty intense. I don't think I'm one that can follow a video workout everyday. I need to get outside and clear my mind. Something about listening to that guy babble on + on just does not make me feel as good! I have had some girl-friends who have done it and liked it and a few guy friends too...to each their own! =)
