Check out what we woke up to...

I'd say it stuck. Literally a winter wonderland.
In honor of our first and probably (hopefully) only snowfall of the year we had snowy pancakes.
I used some Kodiak Cakes pancake mix for the first time...

I have searched high and low for a good, healthy pancake mix or recipe. I'm not kidding. I've been searching FOREVER. This is the BEST pancake mix EVER EVER EVER. It's better than Hungry Jack buttermilk mix. It was $7 for the box but it was worth every single penny.
I topped our pancakes with Crazy Richard's PB, banana, real maple syrup, and snow (coconut). This was outrageous. You'll definitely be seeing this combo again soon. We both inhaled our pancakes.

Then we headed out to play!

She may look like she had a good time. And maybe there for a split second she did... But most of the time was spent doing this...

I had to work for those smiles. She hated the snow. It was cold and wet. She lasted long enough to take a quick walk and build a little snowman.
When we came inside my belly was already growling... I had half a Kardea bar to tide me over until lunch. The reason I only had half because it was a little yucky. It had a weird smell and left a gross after taste. I bought it because the nutrition facts were really good. 150 cals, 7g protein...

It didn't tide me over for very long. For lunch I had a grilled turkey, spinach, and sonoma cheese wedge wrap. Sonoma cheese wedges are like laughing cow but I like the sonoma better!
We spent the rest of the afternoon inside watching UP!. What a cute movie!
For dinner we went out with my mom and dad. I had a turkey pita with coleslaw plus a couple of the squirrel's fries. We also had fried pickles... YUM.
Well I'm off to bed now. I can't believe all the entries for the giveaway already! It's neat because a lot of you haven't heard about those bars. See y'all tomorrow!

Where in NC are you from? I live near Hickory. I am so ready for the spring. :)
I live near Wilmington... It's on the coast about an hour from South Carolina. I liked the snow today but am ready for it to go away :)

kodiak is a GREAT pancake mix! i love everything about it - even the box looks hearty enough to eat.
That pancake mix sounds yummy! Sadly, my boys only ever want oatmeal for breakfast.

Where did you find the Kodiak pancake mix? It's made in Utah (where I'm from) but I haven't found it here!

I found the mix at a little tiny natural foods store where I live... I was just browsing the aisles and saw it. They must have just started carrying it because I've never seen it before. I would definitely order it online though if I had to... It's so good and all you do is add water to the mix! Amazing!
Now I know what my next giveaway could be since all of you are interested in the Kodiak mix :)

Kodiak pancake mix is all over the blogosphere but I've never found it anywhere! I hated snow as a kid, too...it's cold!

We actually got some good snow too here in GA which was surprising. How old is your daughter? Mine is almost 16 months and she reacted to the snow the same way. She loved looking at it but hated being in it for more than a minute.
I totally meant to get some of that pancake mix while I was in the States but completely forgot. Oops!
