Iced Coffee and a Squirrelly Squirrel

     
Holy moly! I have so much Savannah research to do! After reading your comments my mom is even planning a trip to Savannah! She said y'all made it sound like so much fun. Thankfully, my mom is going to watch the squirrel so the husband and I can enjoy a romantic weekend away. I think we might need it with a new baby on the way and a possible deployment in the summer. The squirrel would be happier at her Nana's and we'll get to really enjoy some high class restaurants!

This morning for breakfast was cereal.

Kashi cinnamon harvest, skim milk, and strawberries to be exact!

My mom and I had lunch at Chick-fil-a. This is my favorite fast food place. Because one, they are SUPER nice all the time. Two, the squirrel hearts chicken nuggets. Three, its the best place to get something healthy!

I had a chargrilled chicken sandwich and a side salad with their reduced fat berry balsamic. So good and filling!

I also had a dunkin donuts hazelnut iced coffee with skim milk.

My homemade iced coffee is a MILLION times better! It was still good and I'm still feeling a buzz!

Speaking of iced coffee...

Jill asked me for the iced coffee recipe I use. I actually had to play around with it to get it to my liking. Taste and calorie wise.

Start with:

12 ounces of water
1/2 cup of coffee grounds (I use decaf hazelnut or french vanilla. I love flavored iced coffees but hate the nasty syrups Starbucks uses!)

You make that in your coffee pot just like you normally would!

Then I pour the pot into a pitcher and add 3 tablespoons of agave nectar (optional). I do it while it's still hot so it melts. If you add it while it's cold it won't mix into the coffee. Same with sugar if you prefer sugar...

And let it cool in the fridge. Don't add ice! It will make it watery!

When it's cool I add a little bit of ice and a splash of skim milk.

Then add your coffee!

Remember this is the way I like my coffee. It may not be the way you like yours. I definitely like mine more on the stronger side!

I also got some cute pics of the squirrel today. She was in rare form today!


When your kiddo is bored just give her a fork, a jar of peanut butter, and let 4 dogs loose!

Q: When you say you eat 1 cup of oats.. do you mean one full cup of dry oatmeal before it goes in the pot? Just wondering because I eat 1/2cup and it makes lots!

A: I always do 1 cup of dry. Normally it's for the squirrel and I. No matter if she's already eaten or not she always wants some of my oatmeal. She probably eats ehhh about a 1/4 cup of it. So I usually end up eating 3/4 cup of oatmeal and half my toppings. Sometimes I don't even eat it all. I just scrape off my toppings and leave some oatmeal. I've learned to make more for me and less for her at every meal. She always wants whatever I have. If it were just me I'd probably do 1/2 cup-3/4 cup.

QUESTION FOR YOU GUYS!

Do you make something better than a restaurant does? Can you tell I'm proud of my iced coffee ;)

Maybe I'll cook up some ice coffee this summer when I can drink it. I like hazelnut too. Your ice coffees looks great!

I always refer to weight before cooking. Right now I'm at about 1/3 cup of oatmeal.

I love the PB on a fork with the dogs chasing her! I am not that great of a cook, but my egg white veggie omelets are to die for. I'd much rather mine than a greasy, oily omelet from a restaurant.

Love the squirrel and the dogs (by the way, your dogs are gorgeous). We have a black lab and a golden retriever and our 6 mo. old is SO into them already. I just think having your kids grow up around pets is wonderful.

Unfortunately I don't drink coffee, but I am really intrigued by this whole iced coffee thing going on....

You and I are both running for mother of the year:)

Back home they have a Cafe Rio restaurant that makes a pulled pork salad Tex-Mex style. Mine is better.

That is so awesome for your Mom to take Squirrel so you and the hubby can spend quality time together. Parents are soooo awesome like that. I love it when my in-laws come into town to spend time with the kiddies....one big happy family!

When I lived on campus my freshman year, I practically lived at Chick Fil A. It was the only place that had decent (healthy) options!

M always has to eat my oatmeal too. So I have started just making her her own portion when I have mine as well. Saves me from leaving breakfast hungry! What is it with these girls and how much they can eat? LOL

I don't eat fast food very often at all, but when I do it's usually CFA! It is my favorite too!! I agree - their staff is so nice and I just love Truett Cathy and the fact he believes CFA should't be open on Sundays (though that's always when I'm craving a chik-fil-a biscuit, figures! haha!).

Glad yall are all so excited about Savannah!! It's such a unique and charming city!! :)

I make some FABULOUS guacamole. We had some bad stuff for the cost of $7 last week - mine is WAY better.

1 avocado smashed, 1/2 small container fat free Greek yogurt, kosher salt, juice from 1/2 lime, 1 chopped small tomato, 1/4 onion chopped, and a good handful of fresh chopped cilantro. Delicious. Good for you and cost less than $7 too.

I think I make Thai food better than a lot of restaurants - not all. After spending a long time there, we learned a lot about the food, proper ingredients and how to use them. Feels strange to toot my own horn!

I've never been to Chick-fil-a.

I love what you did to the squirrel. I actually wish I would have thought of it bc my son would love it. Well, that, and I want to be mom of the year too. It's great that you'll be able to get away for a romantic weekend with hubby. It is so important to get that. I love Chic-Fil-A too. Hope it's not too long before hubby comes home.

Thanks for stopping by my blog! My husband is in the Air Force, I do have family in the Marines though, and Army too! Mine is in Qatar right now, it's a short deployment, but he will leave again next spring for a 7 month one.

By the way now I want some Chick-fil-a! It's my favorite, and we don't have it here where I am in Ohio, guess I'll have to wait till I go back to Louisiana :)
