Dinner last night was simple. I love the simplicity of hot pasta, a good pasta sauce, and fresh parm. No salad, no side of veggies. Just a bowl of goodness.

Last night I also made my breakfast for this morning. I mixed these guys together for overnight oats.

Local, homemade vegan granola, muesli, maple vanilla yogurt, and a splash of almond milk.
It was wonderful! Plus I had a cup o'joe.

The granola made the overnight oats so wonderful...

It is made my a local vegan baker and she's amazing! I picked this up at the farmer's market yesterday. I also got to sample one of her vegan cookies... YUM! I see those cookies in my future...

The husband was home for lunch time so we went out. He is supposed to deploy again for 7 months sometime in July so we are really taking advantage of the time we do get to spend with each other. Which is why you guys will see a lot more meals of mine in restaurants.
We went to Flaming Amy's Burrito Barn. Sure it sounds a little funky but it's so good! We've been going there for quite awhile.
I ate a handful of chips with some homemade salsa and a little bit of queso.

And I opted for a black bean, rice, cheese, salsa, sour cream burrito.

The burritos are HUGE. Like 5x the size of a Taco Bell burrito. I ate half of mine.
Tonight is dinner at my mom and dads. Again the husband has to work tonight. No fun.

Wow, everything looks delicious! I usually go to Chipotle but seriously need to branch out and try new places.

Don't you just love all these night flights - hubby has only been home before midnight once this week because of low-light flights. My hubby is deploying around the same time so their squadrons are probably doing similar work-ups to get ready.
I looked at our commissary for that maple vanilla yogurt but no luck. I love anything maple but it is way too expensive in Hawaii to shop off base.
Sometimes it's good to just enjoy a bowl of carbs for dinner and not worry about the veggies- and that pasta looks delicious!

So glad you're able to spend this quality time with your family. You're a strong woman being married to someone that has to leave for such lengths of time - good for you Kristen! I love eating out, and seeing restaurant photos, so great! Can't wait to see more!

That burrito looks awesome. I wish we had some good Mexican around here. I like the layout. It is very bright and makes me want to smile.

You can never go wrong with pasta, that's for sure. Especially when it's covered in cheese. Oh, and I love the layout. Very clean and bright.

I love giant burritos. And really, most people do...as was proven by the success of Chipotle!! Man, all the best foods wrapped up in a carb wrap of goodness?!?! Perfection!

First, your pictures/food looks really good. Especially the pasta with parm. I'm a carb junkie so I'm pretty easy.
The vegan granola looks delish too. Can't imagine what its like to have your husand away for 7 months. Let alone being deployed. Nice that you're able to spend some quality time together.

Thank you for your kind comments on my blog. Definitely take advantage of your family time. No need to blog everyday if you don't have the time. This is the time when our children need the most attention from us and I don't want to be a mom who throws that away for blogging.
