I was stuck in a toast rut over the weekend. I scrounged up some Fresh Market wheatberry bread out of the freezer and ate it Saturday and Sunday.

I've also been drinking A LOT of tea... Since I've been drinking tea I don't even want coffee anymore!
I've also made someone else a tea addicted...

She'll drink any tea. Even without sugar. Crazy girl!
This morning I broke my toast rut and made some overnight oats. The only reason is because I noticed Sunday morning my almond butter was getting low. So I mixed 1 cup rolled oats, 1/2 almond milk, 1/2 cup plain yogurt together and let them sit overnight in the almond butter jar. This morning I added 1/2 a nanner and a sprinkle of granola. I also had a cup o'joe only because the hubs made it for me.

Speaking of the hubs... on Saturday night we had a date night! Thanks to my sister and my mama! They watched the squirrel and we went to dinner and a movie. We saw Robinhood... AWESOME!
We had Indochine for dinner. It's a Vietnamese and Thai restaurant. They make everything homemade. They even dry their chili peppers in the sun on the roof of the building for their hot sauce.
We went a long time ago... Probably 5 years ago. We haven't been there since our palates have matured... That may be an odd statement but it's true. Over the past couple years we've been experiencing such different foods. I never used to try anything new. You can tell by my blog posts that I usually eat the same things all the time. It was much worse awhile ago...
Anyways, with the Marine Corps sending us to different places we've got to experience such wonderful food. It's been an incredible thing to go through together.
So for an appetizer the husband ordered a Thai version of crab and shrimp wontons and I ordered Vietnamese summer rolls. Plus we had a small salad that came with our meals.

They were both incredibile! I loved the summer rolls though and of course he loved the wontons.
Years ago I would have desperately searched the menu for something normal. I probably would have just ordered something like cashew chicken for dinner and picked around the veggies.
For dinner I ordered the Bun-Thit Nuong. Which had Cha Gio (kinda like spring rolls) cut up over the top of cold rice noodles, mixed with shredded cucumbers, carrots and basil, and crushed peanuts. Plus it had some spicy sauce for the top. The husband had beef red curry. Both dishes were UNREAL.

I have fallen in love with rice noodles and rice paper. Any idea where you get those things? I'd love to make those summer rolls at home!
AND for dessert we had coconut cake with coconut icecream.

It was soooooooo goooood...
So I'm off to see what y'all did this weekend! I hope yours felt as long as mine and you aren't hating this Monday too much :)
If you know where to get rice noodles and rice paper please let me know... I have no clue what the packaging looks like! Or even if you have a good summer roll recipe I'd love to hear it!

the rice paper and noodles can be found in any asian aisle...but i had trouble finding my rice paper so I went to a specialty international foods store here in town. if you cant find any in your area, let me know and ill send you a package with the paper and noodles...
summer rolls are extremely easy to make...carrots, cucumbers and any other veggies you could squeeze into it. sometimes people also put basil leaves...i havent tried that but i dont doubt its good.

I would try an asian grocery store for your rice noodles/paper...
Our weekend was very low key, hung around the house, husband worked Sat, grilled out, etc.

You can buy rice noodles and paper at WF, in the baking aisle...it's with all the asian foods like seaweed and the different vinegars!

I wanted to answer your question you posted on my blog, regarding how the heck I know how much sugar has been added.
1) Only 2 foods should have natural sugar; fruits and dairy products (fructose and lactose).
2) When you see "sugar" on the label of any other foods, it's most likely ADDED
3) The Natural sugar in fruit is about 15 grams per serving, and in dairy it's about 12 grams per servings. So any MORE sugar listed on the label is likely ADDED.
4) Read the ingredient list. Look for words like; fruit juice concentrate, honey, molasses, fructose, glucose, etc. Those are added sugars.

She is soo adorable! I don't think I've ever had Thai/Vietnamese food. Reading all these blogs makes me want to get adventurous in my eating though!
It's always great to have the opportunity to try new foods. It all looks so good, and that cake, it put the icing on the evening.

i love those comparison pictures! they definitely grow way too fast. when you're hugging Squirrel, don't you always think, "i'm going to hug you and kiss you and hold you as much as i can before you grow up and don't let me do that anymore." also, i'm super jealous of the beautiful weather and beaches you guys have. my kids would love being able to go to the beach any time.
you should be able to find the vermicelli noodles and rice paper in any Asian store. if you can't find it in the asian store, never go back there lol. it'd be like going into subway but only being able to order burgers. the rice paper basically look like clear, flat, round, translucent sheets of paper. good luck! you might like one of my older posts about spring rolls (i call em wrap wraps) here.

the good thing about spring rolls is that you can put whatever you like in the rolls. my daughter doesn't like shrimp so i leave those out. my hubby likes pork and i don't so he has his with pork while i have mine with beef. tons of combination. get creative and just have fun. there's no wrong way to make these.
