Breakfast the past couple days has been this loveliness...

Chocolate chip banana bread. I've been craving banana bread so I made some the other day. This recipe isn't healthy at all but it is delicious! (I added 1/2 cup dark chocolate chips to it). I've just been eating it in moderation. One slice paired with fruit in the morning. I made the recipe then cut the bread into slices. Then I put all the slices on wax paper in the freezer. Then I put all the slices in a freezer bag. It froze so well! In the morning I just pop a slice in the oven at 350 and it tastes like it just came out of the oven! YUM!
Around Christmas time the husband and I bought this...
The Fresh Market Christmas Blend. At the time we really didn't care for it. We made a couple pots and then pushed it to the back of the cabinet.
Well I was out of coffee the other day and made this. As soon as it started brewing I saw our Christmas tree in the living room. I had a serious urge to make sugar cookies and I started humming "Silver Bells". No joke. I was amazed at how I felt about it since we didn't like it last winter.
Needless to say I've had a cup of it every morning for the past few days.
Lunch yesterday was a beanie cheesy quesadilla. It's something I need to make more often. I just took a multigrain tortilla and filled it with cheese and pinto beans.
Then I just coated a pan with PAM and grilled it. I ate it with rice and veggies.

One thing the husband and I pride ourselves on is the way our kiddo eats. Before we had children we both vowed to never cook something different for our kids. Sure there are times when the squirrel cannot physically eat what we do. Steak is still hard for her and she can't eat a salad for lunch. But 99% of the time she eats what we do. See...
What we've accomplished with this rule is that we can take her anywhere and she'll eat whatever is there. Plus its so much easier to have her eat what we do. She loves vegetables, shrimp, asian noodles, veggie burgers, cottage cheese... She'll really eat just about anything! Yesterday I got spoiled. I got a package in the mail from Galaxy Granola. In June Galaxy Granola is launching 2 new flavors! Hint of Honey and Maple Pecan Quinoa. I got a sneak peak of the flavors!
Since I've been pregnant I've been addicted to anything with the word "maple" in it. I knew instantly what I was going to do with the Maple Pecan Quinoa...

Put it on top of my maple vanilla yogurt!
I swear Galaxy Granola is the best granola I've ever had. The reason being is it's so light and crunchy. It also doesn't make me feel like a cow eating it. I don't really have to watch my portions with it as much as I would a regular granola. 1/4 cup of the Maple Pecan Quinoa has 120 cals, 2.2g fat, 4g fiber, and 5g of protein. The ingredient list is flawless. Plus it's delicious! I haven't had a chance to try the Hint of Honey but I'm sure it's good!
There's another reason why I love it...

The squirrel is HUGE fan! She was eating it straight out of the bag before she decided to add some to her yogurt.
So the reason this weekend is so busy is because a couple good friends of ours are getting married. Last night we had the rehearsal and rehearsal dinner. Today is the wedding. Everything is on the beach so it will be beautiful.

I bought those chia seeds the other day and was super excited. I got them home and started thinking. What in the world do I do with them? Sprinkle them on cereal?
For now they'll stay in the cupboard...

Let me know what you guys do with your chias! And is it pronounced CHEE-AH or KEY-AH?!

I've mixed chia seeds into marinade for a little extra crunch.
I love chia seeds!! I mostly use them in oatmeal, yogurt, and smoothies. I mix them with the dry oatmeal and then cook it so the seeds soften, but you can eat them without cooking them too!

Chee-ah. Like a chia pet. I sometimes put them in smoothies. In all honesty, I don't think they're that great. I know that they're really good for you though.
I mix them into oatmeal-- they really don't have much flavor. You could probably add them to baked goods for a little extra texture. They're suppose to be really good for you.
Make some chia pudding to put in your oats! Just mix 1 tbsp chia with 1/4 cup milk (I use almond milk) and pop it in the fridge overnight. It will expand a lot and if you put it in your oats they will be super creamy!
Some galaxy granola arrived in the mail for me today. I had a taste of each and can already tell I'm going to love them. I gave Makenzie a taste too and now she keeps going in the pantry and grabbing the raspberry granola bag. At least it's good stuff she's after and not chips like in other households. Gotta love teaching kids to eat well. :)
I just bought a big batch of chia seeds! I cook them up in oatmeal. They add some bulk and even just a tsp or so makes the bowl so much more filling. They absord 9-10 times their weight in water and digest slowly so your energy stays level. you can add them to anything though, cooked or not..the possibilities are endless

i cant say enuff about how great chia seeds are! theyre good raw and cooked :)
That granola looks so yummy! Your daughter is darling, I haven't yet tried the chia seeds. keep us posted on what you do with them.

Speaking of Christmas, I caught Nick singing Christmas carols the other day.....
It's great that the Squirrel will eat whatever you and your hubby eat, and that you are disciplined enough to not "feed her anything and everything she wants". That's when parents get in trouble because then their children will never eat what you made them! You've done it right :)

if you let the chia seeds soak in some water, they expand....to i like to mix the 'expanded' seeds in when i make pudding :) hope that made sense!
put the chia seeds in your oats, cereal, or salads!! they definitely bulk up your oats, so add a little bit more water than usual. i am cracking up thinking of your baby eating a steak and salad! haha
I have never used Chia seeds but I know a lot of bloggers use them in their oats. BTW, your family is so gorgeous!!! Every single one of you!!

I am so jealous of the galaxy granola you all get! I even tried to order some but they don't ship to Canada. My mom suggested a US shopping trip sometime this summer for baby things...I'll pick up some if we go.

Beanie cheesy quesadillas are the BEST! That is so awesome that your daughter is such a good eater. I work with toddlers and I cringe when I see some of the lunches- applesauce and peas EVERYDAY!
I LOVE chia seeds! I put them in everything -- in smoothies, on top of salads, bake em in muffins....they are so wonderful!
