I read a lot of momish magazines. You know, the ones with the easy ways out for making your kids dinner. Normally I just skim the meals and get ideas from them. Last nights dinner was inspired by a mommy magazine.
I saw the word "pierogi" in an article the other day. My mom used to make pierogies for us when I was little. For those of you who need a memory jog a pierogi is dough that is filled with potato and cheese. Almost like a ravioli.
While shopping the other day I picked up a box of frozen pierogies. Actually they aren't too bad for you. The ingredient list didn't exactly fit my standards but they are low in fat and calories. They only gave me more inspiration to make my own at home.
The other night I sauteed onions and garlic in about a tablespoon of butter. When the onions were soft I added 8 frozen pierogies (3 for me, 4 for the hubs, and 1 for squirrel). I let them cook on a low heat for awhile and then added a splash of white wine. Then I let them cook until the wine was gone and the pierogies were brown.

Delicious, simple, and different.
Plus I did a green bean recipe I found in the book I've been reading, Cooking for Mr. Latte. Y'all have got to read that book if you love good food. The recipe in the book is really just fresh green beans, butter, fresh dill, and salt. SO GOOD! The dill is incredible in it!

All together now...

I need to be creative like that more often.
Breakfast this morning was simple french toast. 12 grain bread dipped in egg whites and cinnamon. Grilled on the griddle. Topped with Earth Balance and pure maple syrup. Plus I had a maple chicken sausage on the side.

Oh, and some iced coffee.

So I'll leave you with some pictures of the beach from yesterday. Thankfully, I think my sister likes to take pictures almost as much as I do. So I'm actually in some of the pictures! The only downfall of liking to take pictures is wishing you were in some of the shots.
I took a Diet Snapple to the beach with me and must have looked like a crazy person laying in the sand photographing a Snapple. A little artificial sweetner won't hurt once in awhile.

I continued on with my reading for most of the day...

While the squirrel made sand angels.

The sand is like cinnamon and sugar.

We eventually broke down and played in the sand too.

We all got a little fried even though we were all wearing a ton of sunscreen.

I've heard that book is good...I'm just going to now read everyting you read, b/c I always enjoy them! I just got the Baker's Apprentice from the library, so that is next.

I used to eat pierogis all the time, they are so good! I love the frozen kinds, too, even though they aren't really "all natural"
