My actual breakfast wasn't new.

Just egg beaters on a sandwich thin with laughing cow cheese.
The husband made me breakfast this morning and he made me a little too much egg beaters.
A friend of mine told me to try Tiger Sauce.

I'm not a fan of hot sauce. I'm actually not really a fan of spicy food in general. I think my tastebuds are weak in the department and when things are spicy I can't even taste my food. And who doesn't want to taste their food?!
Anyways...
I tried the Tiger Sauce on my eggs this morning.

YUM YUM YUM!!! It's just a tad sweet, a tad spicy, and a tad vinegary (is that a word?). It is such a great sauce! Plus it's only 10 calories per teaspoon and you probably won't need much.
Plus I had some iced coffee.

Lunch today was unpictured. BUT let me show you what I had for lunch yesterday.
I started with some roasted veggies. I haven't always been a veggie lover. Infact, I spent my life up until recently only eating corn and brocolli.
If you are still getting used to the veggie thing try my lunch recipe.
I took a yukon gold potato, half a red pepper, a whole zucchini, and probably a quarter of an onion and tossed them with olive oil and coarse sea salt. Be pretty liberal with the olive oil so the veggies won't stick. Olive oil is good for you. Plus most of it ends up on the cookie sheet anyways. And you could always account for the extra fat during your day.
So I roasted all those veggies on a cookie sheet for 30 minutes. 20 minutes at 350 and 10 minutes at 450.

Then I took all the veggies plus some fresh spinach and piled it on a sandwich thin. Then I sprinkled some fresh parmesan and balsamic vinegar on the top.
And paired it with grapes.

I did another version on the grill. Which was equally good. I like using those sandwich thins and a white cheese. Last time I used swiss.
Those veggies keep for a day or so in the fridge too! So I roasted quite a bit and then put the rest in the fridge. To warm them up put them in a hot pan to crisp em' because they do get a little bit soggy in the fridge.
I feel like I'm getting excited about food again. I've been trying some new healthy things and feeling back on track.
It feels GOOD.

Glad you're feeling good and back on track!! It does feel good, you're right. I've been majorly lacking the veggie dept. during the first trimester, but as I get closer and closer to the 2nd I'm reintroducing them and I feel so much better.

tiger sauce sounds awesome. i bet i'd love it! i usually add Tabasco on my eggs.
The veggies look delicious. I love roasting my asparagus with some garlic. The Tiger sauce sounds yummy too...I'll be checking that one out.

I need to try this veggie sandwich! Like you in the past, I could do better eating my veggies and anything on a sandwich with a little cheese pulls me in!
