Super Supper

     
I had to share this dinner we had the other night with y'all.

It started with a loaf of Great Harvest garlic cheddar bread.

Plus some grilled veggies. Just zucchini, eggplant, potato, onion, garlic, salt and pepper, and olive oil. All wrapped in foil on the grill.


And half a steak seasoned with just salt and pepper. The whole meal was so simple but so good. The veggies were definitely the hit! You've got to try grilled veggies if you haven't had them. The zucchini and eggplant got a tad mushy but the potato gave it some texture.


I had just enough blueberries yesterday to make pancakes yesterday morning. I used some Trader Joe's pancake mix, blueberries, Earth Balance, and pure maple syrup.


I love using fresh blueberries in pancakes!


And for lunch I used up the rest of my grilled veggies! The husband made me a grilled sandwich thin with swiss cheese and veggies. SO GOOD! I told him I could have easily ate 2.


And all week I've been snacking on my
Lindt sea salt chocolate. This stuff is bad news... I'm surprised it's lasted this long in my house.


I'm not sure if I mentioned that we are leaving tomorrow for Cape Hatteras. It's the husband's pre-deployment vacation.

Check out what he bought me for the trip.

A couple Pro Bars and a Luna I haven't tried.

Plus a new water bottle.

He's a good guy... sometimes... ;)

Awww, the squirrel looks like she's all ready to go!! I've been seeing so much Great Harvest bread in the blogworld lately...I wish I had a store near me!!

The blueberries in the pancakes look so good and gooey, they almost look like chocolate! I seldom make pancakes, I dont' know why.
