A Trip to Trader Joe's

     
Sorry for missing yesterday you guys but I was in such a weird mood. Honestly, I didn't really feel like blogging. I'm sure you guys have those days!

Today the squirrel, my mom, and I took a spontaneous road trip to Raleigh! We went up for 2 reasons. One, to eat lunch with my sister. And two, to make my first trip to Trader Joe's!

I had breakfast before we left this morning. It was an ogre in a
Krema peanut butter jar. My dad killed the jar and then sent it over to me! I added a 1/2 teaspoon of xanthan gum to thicken the ogre up a bit and it was perfect! I also had some orange blossum tazo from my BFF. You know someone's your BFF when they share their tea.


It takes us 2 hours to drive up so on the way I snacked on some grapes.


Hello Trader Joe's!

I really thought about bringing a little cooler in case I wanted to bring home something cold. I'm glad I didn't because I spent enough in there! I really had to control myself. I love how they have their own brand of things. Even my mom went crazy! I'll show you my goodies tomorrow!


Here's me and the squirrel with our goods.

You know you're a food blogger when you get your picture taken outside of Trader Joe's! Especially when you don't even feel like a dork!

After our shopping we picked up my sister from N.C. State and headed to The Cheesecake Factory! Have you ever been? It was our first time... My sister, my mom, and the squirrel (obviously interrupted from her blackberrying).


I had half a turkey sandwich, half a salad, and a bowl of potato soup. It was really good! Plus you can't go to The Cheesecake Factory and not have cheesecake! I had Adam's Peanut Butter Cup Fudge Ripple cheesecake. It was amazing.


We left there really stuffed and did some shopping at the mall. The squirrel was so exhausted at one point that she needed a break.

In the middle of the mall floor. Lovely. Only my kid!


We had such a great trip. I love Raleigh. If my sister would let me I'd live with her.

We ate lunch pretty late so I skipped dinner. I am seriously still stuffed. I don't think I could put a piece of food in my mouth. Bleh. I hate that feeling. It was worth it though!

I have got some really good questions on my formspring! Y'all are SO clever! I figured I'd answer one a day for awhile. Unless I get a ton of questions.

Here's the first one:

Q. What is your favorite "not so healthy" food? Now that you are pregnant, do you think you will indulge in it a little more often? by faithfitnessfun

A. Mexican food all the way! I love anything mexican! I think it's the cheese. I don't have a lot of willpower to begin with so I have to work really hard to maintain my weight. When I was pregnant with the squirrel I had NO willpower so even I'm interested to see if I will indulge more!


It's hard not to have that "I'm pregnant so I can gain weight" mentality. Unfortunately, I never got to the cravings stage with the squirrel (she was born 3mos early) so I never got to experience that. I can't wait to see how my emotions and hormones control my eating. Should be interesting!

I got a REALLY good one for tomorrow. I am so excited to see who asked it! You know who you are but I have a good idea who asked it!

And a question for you! Since we went to Raleigh today I missed my body combat class. That throws off my workout schedule. I was thinking of doing an hour long pilates class on Friday. Have any of you done a pilates class? Is it super hard? I don't want to stress out my body too much but I think it can definitely handle a little challenge.

The Best Pizza Ever

     
Oh my gosh y'all. My butt hurts so bad from our bike ride yesterday! Note to self... Buy a new comfy butt cushion for your bike dummy.

A little too much info? Ehh maybe.

This is going to be a quickie post because 1) I'm tired and 2) We really did do much today!

First the food...

Breakfast was a whole wheat english muffin with
Naturally More almond butter (this stuff is so good!) and Crofter's superfruit spread.

Lunch was "fried chicken" in a whole wheat wrap with sweet chili sauce and spinach. Plus a pear. All I did for the chicken was sliced it into strips, dipped it in egg white, then dipped it in a wheat breadcrumb/panko breadcrumb mix. Then baked it in the oven for about 30 minutes. Good stuff!

Towards the afternoon I finished my last Luna protein bar. You see... I was really excited about those stupid bars so I bought 5. Good riddance. It's not that they were thaaat bad... They just weren't what I expected...

Dinner was PIZZA.

HOLY MOLY!!!


If you ever try any of my ideas puuuhlease try this one. I bought a Boboli whole wheat pizza crust from the store. Before I baked it I cut out the portions. I kept 2 slices out and threw the rest in the freezer. Had the hubs been home we would have made the whole thing.

I put the oven on 450 and threw them in just to toast the tops. When they came out I cut a garlic clove in half and rubbed it all over the crust. THIS IS SOOOOO GOOD. Then I added Bertolli organic spaghetti sauce (tomato and basil flavor), chopped spinach, fresh part skim mozzarella, and 3 small chopped basil leaves. Then I threw it back in the oven until the cheese melted.

This was unbelievable. I would take this pizza over Dominos and Pizza Hut anyday. Plus it was healthy! You must try it.

Well that's it for all you foodies out there...

Now onto some squirrelage for the family...

Just some pictures of her today. She was full of it today... I love every minute of it :)

We had our dogs for about 6 years before we had the squirrel. Of course we were really worried on how the dogs would do when we brought her home from the hospital.

Why did we ever worry???

Her new spot to watch TV. Does Gus ever get a break?! Poor guy...

Alright guys... I've got to rest up! Tomorrow we leave for Raleigh to run the Krispy Kreme Challenge!!! I've got to run 2 miles, eat a dozen donuts, and run 2 miles back. HAHA. I'll be lucky to run the first 2 miles... and I definitely won't be eating a dozen donuts.

Spaghetti Monster

     
Hope you guys had a happy Monday... Mine was uneventful but peaceful. Which was nice.

I did overnight oats for breakfast this morning.

1/3 cup oats, 1/3 cup vanilla yogurt, 1/3 cup vanilla rooibos tea, and 1 tablespoon chia seeds. Sprinkled with Hawaiian granola this morning and half a banana.

After breakfast I headed to the gym. Did you notice my lack of exercise the past few days? Well first of all, like I said yesterday, the squirrel has been sick. Second of all I really think I pulled a muscle in my quad. It hurts to run... REALLY BAD. It's hurt for a couple weeks now.

Today at the gym I did the bike for 20 minutes and then ran a mile. I felt good. No pain. I need to heal because Saturday is the
Krispy Kreme Challenge... I've got to run 4 miles :/

We'll see how that goes...

After the gym I FINALLY had a cookie dough Luna protein bar. I've been searching all over for those little guys.

I was really excited to try them since I love the regular Luna bars. Unfortunetly, it was just ooookaaay... I appreciated the little chocolate chips in it. It really tasted like a protein bar... Which I guess is to be expected.

The squirrel LOVED it. She probably ate half the bar.

We got home just in time for a veggie filled lunch. I made an Amy's veggie burger with Sabra hummus and spinach. All on a sandwich thin. Plus kale chips and broc. Definitely got my greens in today!


Dinner was cheese tortellini with tomato sauce and parm. I needed something easy...


The squirrel had quite a few tortellini plus some spaghetti noodles. Spaghetti is her favorite food.
I wonder why.......


And tonight before bath and bed I noticed how cute she was standing on her chair with her wisk...


This was her in her chair about 6 months ago. Amazing how they change so quickly!
