Vegan Sugar Cookies

     
Last year I saw Tina made a sugar cookies using tofu. I searched far and wide for the Nasoya Silkened Creations she used in the recipe... I ended up emailing Nasoya and it turns out that they discontinued it. So I tried this recipe instead.

I must admit... This was my first time ever eating tofu. Tofu is intimidating to me and doesn't have the best reputation. Plus it sure does look weird...


Especially all mashed up.


Once I mixed it with the rest of the ingredients it was ok.


The dough looked just like sugar cookie dough.


After it was all mixed I put it in the fridge for a little bit to firm up. When it wasn't too sticky I formed it into a log and rolled the log in sprinkles. I covered it in plastic wrap, pressed the sprinkles down a bit and put it back in the fridge.


Then I took a sharp knife and cut cookies out of it. Probably 1/2in thick?


I pressed a couple chocolate chips (not vegan) in the middle before baking.

HOLY MOLY.


They were perfect.


So soft on the inside.


The sprinkle thing really did it for me. They were nice and crunchy. You gotta try it... Even if it's just for regular cookies.



The verdict?

YUM!

WWSS? (what would santa say?)
He's getting em' on Christmas Eve!


So even my dad liked them... Here's a question for you....

When I told him they were made with tofu and vegan butter he said "WHY?". I didn't have an answer. Why vegan? How are they better for you? I just like trying new things... Does anyone know the health benefits?

Gingerbread Cookies

     
Gosh I missed y'all. Thank you for all the sweet comments...

I saw this recipe on Jenna's blog the other day and HAD to try it. I love gingerbread. Its not too sweet, interestingly spicy, and so much fun to decorate! I've never made it so it was a reallly neat to cook it on the stove.

The ingredients are simple:


Cooking it on the stove was overwhelming at first but it worked out perfectly.


When you add the butter to the mix it smells like heaven. Seriously, thats what I think heaven smells like.


The dough turned out perfectly.


And we cut out little men, bears, dogs, and dinosaurs.


The squirrel had a blast and the dogs enjoyed cleaning up.

This is a great recipe!

Plus this is an all day event... Baking and decorating.

And frosting shots before bed. Lovely.

She actually did pretty well.

But I prefer mine naked :)

Where Have You Been?

     
I don't have any excuses... My heart just hasn't been into blogging for the past oh 5 months. If you've ever blogged before you know that your heart has got to be into it. It's time consuming. I've missed it terribly so here I am.

This blog has taken yet another change of pace. We'll get to that later.
