
See, I arranged everything in my food processor for the perfect picture. I failed to read the directions. When I blended everything together I ended up with big hunks of onion and garlic through out the mixture. Yuck.
I was able to pick out the majority of the chunks. Lesson learned.
Here's the right way to do it.
Black Bean Burgers
1 (16 ounce) can black beans, drained and rinsed
1/4 c roasted red pepper from a jar
1/4 c onion chopped
2 cloves garlic minced
1 egg beaten
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup bread crumbs*
1. In the food processor, blend the red bell pepper, onion, and garlic.
2. Add the beans and pulse until you reach the consistency you want.
3. Stir in egg, salt, pepper, and bread crumbs.
4. Divide mixture into four patties (I did 3 big ones) and put them on wax paper.
5. Put them in the fridge to firm up for about an hour.
6. Place patties on a baking sheet lined with lightly oiled foil, and bake about 10 minutes on each side.
*All I do for whole wheat bread crumbs is take 2 slices of grainy bread. Really whatever bread you normally use. Pop them in the oven at 200 degrees for about an hour. Toss them in a food processor with whatever seasonings you like. I did dried basil, oregano, salt, and pepper. It keeps for a long time in an airtight container.

They had the same flavor and texture. I'll have to figure out how to add more veggies!
I topped mine with laughing cow cheese and spinach. All on a sandwich thin.

I normally buy Amy's veggie burgers but they are REALLY expensive. I've been searching for something cheaper and healthier. This recipe is cheap and so easy to add whatever ingredients you want. I'm sure you could even use brown rice or rolled oats instead of bread crumbs.
This was perfection. Now I've got to figure out how to freeze them. So I don't have to buy veggie burgers anymore.

And dessert for the night....

(Hehe, and even if you did have to pick out some chunks, the "into food processor view" is lovely-- very artistic!)I love veggie burgers but don't eat them as often as I like because I think they are pricey... I am defintely going to try these out. Let us know if you discover any tips or tricks for freezing them!

WOW, that actually looks like something I could eat, and I HATE beans. Hmmmmm, wonder if my hubby would notice the difference...
