5 Minute Egg Sandwich

     
Geez this week has been busy. Instead of blogging I've been doing some meal planning for the next couple weeks. Meal planning keeps us on track financially and eating healthy.  I'll show you our week in meals soon...

FOOD

This morning was a 5 minute egg sandwich. Being a mom of two I rarely get a good amount of time to make myself something to eat. Most of my meals are premade (by me) or take less than 5 minutes.

This is what I eat for breakfast most of the time.

I start with a coffee cup and spray it with oil.  Then I add about a half a cup of egg whites.  Plus salt and pepper.

It gets microwaved for 1 minute.  I stir it at 30 seconds.  Meanwhile my sandwich thin toasts.  When both are ready I add light french onion laughing cow cheese and my egg. 

Done.

This mornings sandwich had light queso fresco laughing cow.  I also added a spoonful of salsa to the egg before I nuked it.  Fiesta.

Ideally, I'd like to add spinach but we didn't have any. 

Have you guys seen this stuff?

Lunch today was a grilled flatbread with ham, swiss, red apple, and grainy mustard.  Plus the rest of the apple.


EXERCISE

I ran on the treadmill at the gym this morning.  I ran 2 miles nonstop.  It's soooo much nicer than running outside.  I hate being hot.  Seriously, I could live in Alaska.  Running in 90 degree weather is not my thing.  It's very discouraging. 

After the gym we went to a gymnastics place for squirrel to release some energy.


This kid is a pro.  We are going on Saturday for a trial class.  I think she's ready for gymnastics class for sure!

Microwaving eggs saves my butt fuh real. Except my microwave just broke!! I guess I have to use the stovetop. Laammmeee ;)

I have never tried eggs like this! That shall change in the very near future :)
And yes, running in heat like that is so difficult and discouraging. It makes you feel so much more tired. I would run on the treadmill whenever it's hot like that too!
