Full of Summer

     
Squirrelly and I were on our own last night for dinner. I just heated up a frozen black bean burger.


Plus I roasted some brussels sprouts and gave them a drizzle and shake with Garlic Gold.  Loving that stuffs.


Breakfast this morning was more overnight oats.  I'm addicted. 

This time it was peaches and cream. 
(1/3c rolled oats, 1/3c vanilla yogurt, 1/3c vanilla soymilk, 2 small diced peaches, sprinkle of cinnamon)

Lunch today was leftover summer rolls.  They did keep well but I'm not sure if they'd last forever in the fridge.  Notice my new obsession?  Labeling everything with dry erase marker.  Genius idea.


They were better yesterday but were still good today!


I spent part of the afternoon taming my garden.

We have 8 basil plants.  I wanted to make sure we had basil for the summer... Now we have too much.

I collected quite a bit but didn't make a dent in it.



I made 2 batches of pesto.


Just 5 garlic cloves, 4 cups of basil leaves, 2/3c evoo.  All blended in the food processor.

Into the freezer these will go.

The husband and I walked almost 4 miles today and now we are enjoying a typical afternoon thunderstorm.

And I'm enjoying one of these...

Iced vanilla rooibos with vanilla soymilk.  YUMMMM.

my basil and other herbs are out of control. No plants really though! those brussel sprouts...oh MY gosh :)

I have a black thumb. Seriously, my basil is dying and my tomatoes are rotting on the bottom. I really want to make pesto but I think I am going to have to buy basil from the grocery store.

Our tomatoes take over. In the side garden where we didn't even plant them this year (but had in the past), they are sprouting up like weeds, threatening to overtake the onions and peppers. It is so odd to weed out handfuls of tomato plants. I plan to jar pasta sauce once the tomatoes finally ripen. My first year trying it (jarring), so wish me luck!
