Cold for the Carolinas

     
Boy was it cold this morning when we woke up.  Everything was icy.


This kind of morning makes me want my sweatpants, a blanket, and an endless pot of coffee.

I settled for my pajamas and a bowl of coffee.


Plus a piece of Ezekiel toast with almond butter, fig preserves, banana, and a sprinkle of chias.


I made the kids mac-n-cheese (just whole wheat pasta, 2% cheddar, and a tablespoon of earth balance) for lunch and made myself a small bowl as well.  Plus carrots and celery on the side.


I have had Kath's chili simmering in the crockpot all day.


This recipe calls for a ton of beans and no meat.  We'll have to see what the husband thinks.  I'm also going to try Ashley's cornbread recipe tonight as well.  Hopefully they both turn out!


If it's cold here than I'm sure it's cold where you are... Stay warm!

These are definitely some great eats for cold weather! I turn to soup when it's chilly out too.. just the perfect meal for it!
