In a Rush

     
We had kid food last night for dinner.

Gardein nuggets and vegan mac-n-cheese. I had quite a bit of that daiya cheese leftover so I decided to try the kids on vegan mac-n-cheese.  I really don't care for faux meat products.  I didn't really care for those but I got them on a whim.  I have no desire to go vegan or even vegetarian however, those cooking styles intrigue me.  It's amazing to me to make cookies and mac-n-cheese and not use a single animal product!

The mac-n-cheese was really delicious.

My alarm didn't go off this morning so we were rushed out the door.

I made sure to grab my coffee...


And everyone got loaded toast.

Ezekiel, sunflower butter, banana, honey, and chias.

On my way home I stopped at PCJ and grabbed a soy vanilla latte.

My new favorite.  These are amazing.

Lunch was another salad.  I'm going through these pre made salads like crazy.


I know the pictures are boring but these are easy to prepare and loaded with nutrients.

Spring mix, leftover broccoli slaw, carrots, toasted pecans, almonds, dried cranberries, raisins, and a chopped up Amy's veggie burger.  All drizzled with cinnamon dressing.  SO GOOD.

It's such a dreary day here....

Sometimes meals like that are easy and fun! My fave go to breakfast is Greek yogurt and fruit!
