Just Call Me Mama Pea

     
Might as well. I'm flying through her cookbook. Should have planned for a Julie and Julia kinda thing!

Last night for dinner were thai veggie burgers out of Peas and Thank You. Just go buy the book. Seriously, only $13 on Amazon. Worth every penny.

These burgers are amazing. A thai veggie burger with grilled pineapple and a little bit of light mayo.  I'd rather have this than a regular burger.

What?! Did I just really say that. Yep.

Plus we had smashed potatoes with broccoli on the side (potato, broc, milk, earth balance).  Random but those taters needed cooked.


And pie for dessert.  I hope this never ends....


This morning I made a yogurt bowl with a new-to-me Oikos.


Yogurt, granola, banana, chias, almond butter, and fig spread.

Yesterday I bought a bunch of clementines at the store.  I really don't like oranges.  They are a pain to peel,  messy, and honestly not that tasty for all the work.  I've seen clementines all over the blog world so I thought I'd give them a shot.


These little babies are great.  No problem peeling, no seeds, no mess.


So for lunch I did a salad with mixed greens, carrots, celery, sunflower seeds, dried cranberries, chickpeas, a crumbled thai veggie burger, and mmmm sauce.  One of the best salads ever.  Plus 2 clementines.


I also really don't like salads... Well I don't like your typical salad.  Iceberg, cucumber, tomato, cheese, and ranch.  Those are good but not healthy.  When I try to order a healthy salad it doesn't taste good.  I usually end up with fat free dressing, iceberg lettuce, and tomato and cucumber.  Blah.

At home I buy a big tub of organic mixed greens and divide it into tupperware.  Then I add other veggies and yummy random toppings like nuts and fruit.


So today for instance, I grabbed one of my tubs that had greens, carrots, celery, sunflower seeds, and dried cranberries already in it.  All I had to add was the veggie burger, chickpeas, and sauce.  DONE.  No chopping required.

I make them for myself and my husband so we can easily grab a quick lunch, just buy adding protein (beans, chicken, tuna), or use them as a side salad for dinner.

I'm working on making and eating salads more often. I got out on them for awhile, but I think I just meed to make sure I keep variety in the mix.And, while I know it's not the healthiest...there is always a little iceberg in all my salads. I am a sucker for the crunch it provides.I just wrote about this today in my blog, because I had a delicious big salad yesterday with homemade (mama pea inspired croutons) and edamame among other things. I'm glad you like the Thai burgers. I've been wanting to try them.
