Vegan Cheese

     
Last night we did quesadillas for dinner. I love it because it's kind of a "one pot meal". I just stuff everything in a whole wheat tortilla and we are good to go!

I bought some daiya vegan cheese the other day on a whim and decided to try it...


I used the cheddar cheese, added beans, and grilled everything in a pan.  Plus I had greek yogurt and homemade salsa for dipping.

Honestly, I was a little scared of the "cheese".  It was DELICIOUS.  No funky taste at all and it was really cheddary.  If that's a word.  I could totally go vegan if I had the money to spend on this stuff.  I'd put it on everything.  It's just ridiculously expensive .

Breakfast this morning was blah. 2 egg whites and one whole egg split with little buddy on a sandwich thin. Plus a banana with Justin's chocolate almond butter.


Speaking of the Justin's almond butter....


The maple is one of my favorites but again expensive... Check out these packs I got as stocking stuffers!


So yummy and they even sell these at Walmart!  No excuses for not eating healthy.  No natural food stores required on this one.  


That's my midmorning snack by the way.  Apples and half of a pack of almond butter.

The kids even love this stuff.

They eat it straight out of the pack.

This afternoon I went to a friends house and I brought lunch.

Mixed greens with apples, toasted pecans, feta, and Mama Peas cinnamon dressing.

That ones in the book too.  One of the best salad dressings I've ever had.
