Coq Au Vin

     
To follow my game plan on eating light but eating before a big meal I had french onion soup yesterday for lunch at atlanta bread. I skipped the cheese because it ends up in a big blob in the bowl. But I did opt for bread.


We went to a friends house for dinner last night and he made coq au vin.

Have you ever had coq au vin?  I actually had to google it when he said he was making it for dinner.  We always get the "coq au vin" cooking style at The Melting Pot.  Not the same thing.  According to wikipedia "coq au vin" literally translates to "rooster with wine".  It isn't a cooking style... It's a dish.  Correct me if I'm wrong.  It consists of chicken, wine, pork, mushrooms, and onions and is cooked a lot like beef bourguignon.

He followed Alton Brown's recipe but he didn't marinate the chicken all night.  I think he said 4 hours.  He served it over mashed potatoes.  Plus toasted bread sprinkled with herbs, evoo, and salt.

The chicken melted off the bone and I could have drank the sauce out of the pot.  Not to mention I could have eaten those little onions like potato chips.  This was perfect.  I cannot even explain how amazing this tasted.  It's been awhile since I've had something this incredible... and it was homemade... and ladies... this guy is single.  HOW?!

Honestly, it wasn't too bad health wise.  I watched him put a couple tablespoons of butter in the potatoes and a spoonful of sour cream.  The recipe called for a lot of wine and some bacon but portioned out I don't think it was that bad.  Well... That's what I'm telling myself! 

This morning I had a session with my trainer so as usually I started my morning at 6 with a protein shake and cup of coffee.  He killed my back for 30 minutes and I did 30 minutes on an elliptical.

I came home and made my new favorite thing.


Laughing cow CINNAMON!, banana, chias, and this time a little honey on a toasted sandwich thin.

It isn't as nutritious as an egg sandwich but it is so delicious.

I had a doctor's appointment for squirrelly .  Since she was a preemie she seen an eye doctor every year just to make sure her eyes are ok.  Her's were fine today!  No more appointments until kindergarten.

Unfortunately, the doctor is booked solid so I made my appointment last year.  I made it at 1:20.  Why I did that I have no idea.  I fed the kiddos lunch early around 11:30 and packed my lunch to go.


Greens, chicken, avocado, lemon juice, and evoo.


Plus carrots and hummus.

That's a pretty cool trick to add the hummus in the bottom of the jar.  However, I wouldn't recommend leaving it for too long because the carrots will get a little soggy.  Also, use a wide mouth jar.  My hand couldn't fit well in this one!

That is a good idea with the hummus on the bottom of the jar! I love Coq Au Vin also. I wrote a paper about it a couple of years ago. There's also different variations where you can use a dry white wine, etc. Pretty cool!

Sounds delicious! I'd say the best dish I've had in a while is the Valentine's dinner I made. It was chicken and pasta with caramelized onions and brown butter sauce. The best part was that my husband absolutely loved and said he thought it was the best thing he'd ever had! Doesn't get much better than that. :-)

@Laura Jane @ Recovering ChocoholicCaramelized onions might be one of my favorite foods. Seriously! I love them! My husband rarely compliments my food because we have such different palates. I love starches and veggies and lean towards healthier foods. My husband is pretty much a carnivore and fries anything he can.

@Sweet and Savory EatsI know I know! I don't understand why he's single. If a man cooks like that he shouldn't be that's for sure. Chia seeds are great. At first I didn't know what to do with them and now I sprinkle them on everything. I haven't done any baking with them but I'm sure you will have some amazing recipe doing so! :)

Everything looks delicious! Coq au vin is on my culinary bucket list to make....that looked terrific! I've recently read about putting hummus or other dips at the bottom of a vessel and putting veggies in....it's brilliant!

I have always wanted to make Coq au vin... definitely on the to-do list! The best meal I have had lately was when I went out to dinner last week and enjoyed maple-glazed scallops :)
