This morning I was up before everyone so I enjoyed my coffee in the dark. Alone.

I dropped squirrelly-o off at school and went to the gym for an hour of cardio. On the way I drank a protein shake.
When I got home I made breakfast. I'm liking that snack first thing in the morning and then having breakfast around 10:30. I feel better at the gym that way.

I made 1/2c egg whites with salt, garlic gold, and spinach. I put it all on Rudi's toast with french onion laughing cow.
Part of the way into eating little buddy decided he wanted a bite.

He ended up eating about half of my egg whites and spinach.

Goober! Seriously, what kid likes egg whites and spinach?!

I picked squirrel up and we ate lunch around 12:45.

I wasn't overly hungry (which was good) so I made a grilled cheddar sandwich with spinach and artichoke hummus. Plus a spring mix salad with roasted sweet potatoes and cinnamon dressing.
Annnnd... Dessert.

A date stuffed with Biscoff cookie butter. Just when I didn't think that couldn't get any better.

I'm attempting pozole for dinner to finish off last night's cornbread. We'll see how that goes!
If you are a mom what do your kids eat that amazes you? Or what did you eat as a kid that amazed your parents?
I used to drink my mom's cold black coffee when I was little! Explains so much.

@KellyMine love hummus too but only like avocados as guacamole. It's amazing what healthy foods they like!

I loved lemon. My mom once gave me a slice thinking I'd hate it but I gobbled it up. Lemons just taste sweet to me - I would eat them like oranges if I wasn't afraid of losing the enamel off my teeth.
I was always a picky eater. Your egg white breakfast looks good.

@Graze With MeNo way! My cousin used to eat tomatoes like apples when we were little. Not sure if I could do the lemon!
I love eggs and spinach, my 3 year old ate some of it but then got a bite of onion, it was all over at that point. I think its the smoothies that have kale in it that surprises me the most, they drink it all.

I loved spinach when I was a kid! I was a weird one too :) PS: I love pairing Laughing Cow with eggs and toast!
Oh, you kids are too cute! I have always had eggs, but kept the yolks, but for some reason, egg whites look SO appetizing to me...I just keep on forgetting!
That your little buddy WANTS egg whites and spinach is terrific! I say don't question that one...just go with it! Pretty soon it'll be pizza and starburst!

Our little guy will eat almost anything - one of his favorites are sweet potatoes in all forms, raw, cooked, mashed, whatever!
@Sweet and Savory EatsMine do too! They've always loved sweet potatoes.
My 5 and 6 year olds picked out lobster, crab, shrimp, sweet potatoes, asparagus, broccoli and peas for their Valentine's dinner. They also picked out tilapia, fruit, and brussels sprouts at the store. My daughter requested seafood in her lunch today, she is the one who requested calamari for her birthday! Oatmeal, granola, wheat/whole grain bread, fresh coconut, straight from the coconut, deer, plain vegetables, are also on the list. My kids do not like fruit snacks and don't care for canned fruit and applesauce. Give them homemeade applesauce and they gobble it up! My son actually threw away about half of his Valentines candy, the suckers,chewy/gummy stuff and candy hearts, he did keep the chocolate. I can be thankful that my kids are such great eater, but they also like "typical" kid foods. Off to make my kids their oatmeal with fruit, yogurt, granola and homemade peanut butter.
