
Honestly I don't ever eat it because it's unhealthy and I don't have time in the morning to babysit eggs.
I've been doing some experiments with eggs in my kitchen lately.

Trying to perfect a microwaved egg that I don't have to babysit and is cooked perfectly.
Here's my technique. This may vary on your own microwave but it should do about the same thing.
Spray a coffee mug or some type of dish with cooking spray.

Love that olive oil spray! I use the mug because it makes good sandwich thin sized eggs.
Crack your egg into the cup.

Season with salt and pepper if you want. I wait till it's done.
Cover the mug with a wet paper towel and put it in the microwave.

Here's the tricky part. I've found that eggs are so sensitive. Max power is too much and 30% power takes forever. Ten seconds extra seconds at the end can completely cook the yolk and that's not what I'm going for. I want the white to be totally done and the yolk to just be set but still a little orange.
Set your microwave at 50% power (get to know your microwave a little... not many people use the different powers) and cook your egg for 1 minute. You can check it after a minute but I'm going to bet it's already done. Then let it sit in the cup with the paper towel over it for a minute or so. Usually that's when I putting the laughing cow cheese on my toast.
My favorite way to eat this is open-faced. Whole grain toast, light french onion laughing cow cheese, and a little S&P.

I like your blog. You are such an inspiring healthy eater. WOndering if you plan to update the "recipage"? I looked in on it and it doesn't seem fully set up? (maybe you are just beginning it i guess...no biggie...just wondering).
I am working on it little by little. I'm the worst reciper ever haha. Everything is usually just tossed in a pan with no measurements. I'm hoping to add one recipe each week but we'll see!
