Pozole Attempt

     
Last night I attempted pozole.


Ingredients:

2 chicken breasts cooked and shredded
5 cups chicken broth
1 cup onion
1t minced garlic
1t cumin
1/2t paprika
1/2t chili powder
2 cans hominy drained

I sautéed the onion and garlic in a pan until the onion was translucent.  Then I threw everything in the crockpot and cooked it on low for about 7 hours.


Pozole was hard to research so I took the basic ingredients and winged it.  Usually it's made with pork but I used chicken.  Then there is some type of broth, hominy, seasonings, and chilies.  The kids ate it so I omitted anything spicy.  I'm not sure if it was anywhere near what pozole is supposed to be but this was delicious!  I ate it with a sprinkle of cheese and leftover cornbread.  The kids loved the hominy.  Did you know hominy has 4 grams of fiber in just a 1/2c?

After dinner we made some brown bag popcorn and watched a movie.


This morning I had to be at the gym at 8.

I was up early and had snacks prepared before anyone was up.

I had a protein shake+clem pre-gym and the larabar+apple post gym.

Did you see my pinterest apple idea?  Cut it and wrap a rubber band around it.  No brown apple!

This is what it takes to go somewhere.  Water for everyone and snacks for everyone.


After the gym (my trainer killed my abs) my sister and I took the kiddos to play.


And we had lunch at Atlanta Bread afterwards.  Balsamic blue salad.


We also had some Valentine's Day treats.

I needed a cookie!

We are actually going out to dinner tonight with my mom dad and sister.  Even when the husband is home he isn't actually home.  Let's just say I'm glad we celebrated V-day when we did.

Ok, that apple idea is the coolest thing I've seen in a long time. I'm definitely going to try that.

@All Things YummyHominy tastes like a corn tortilla but has the texture of al dente pasta. It's delicious! The apple thing amazed me. It's the simple things!

Your food today looks amazing. I'm drooling!

I am always fascinated by how much work it takes to get out of the house with kiddos (packing snacks, water, etc). Good on you for making sure you are bringing along healthy options for you AND them!

Also loving the apple trick. Definitely need to try that soon.

I've never made pozole before either, but this sounds delicious! The last recipe I made was salted caramel pot de creme :)
