Taco Lettuce Wraps

     
Last night's dinner was AMAZING.

I got a little creative and put 1lb of ground turkey in the crockpot along with 1/2c tomato sauce and 1 heaping tablespoon of taco seasoning (I make my own!). I let it cook on low for most of the day. About an hour before we ate I added about a cup of leftover brown rice from yesterday.

Then I sautéed some red and yellow peppers with some onion for veggies and wrapped everything in a boston lettuce leaf.  I topped it all with 2% cheddar.

Fold it up and eat it like a taco.  I had 3.  It had everything in there... Protein, veggies, good carbs, and a little dairy.  My camera died halfway through this photoshoot so I ended up taking this picture with my phone.


To.  Die.  For.

I also had a salted chocolate mousse for dinner.


I had to meet my trainer at 8 this morning and he killed my legs. Seriously, it might have felt better to just chop them off. 10 minutes into my session I could barely walk. I don't know how he does it but he's exactly what I needed!

I was so bad this morning! I took a protein shake to the gym fully intending to come right back home after the gym and eat a good breakfast but... my headphones came up missing so I had to get more. Thankfully, I took carrots to snack on after the gym but I was still hungry.


We ended up doing some more shopping and ate at Chick-fil-a for lunch. My babies are feeling so much better and were being SO good. They seriously deserved a treat of nuggets, fries, and play place time!

I had the chargrilled chicken salad+a couple of the kids fries.

I ditched the sunflower seeds and croutons (wasted calories) but used the whole pack of vinaigrette.

I also stopped at Dunkin Donuts for a hazelnut coffee+skim milk on the way home.

We just took an afternoon walk and both kids are passed OUT!  I'm going to enjoy this quiet time and read some blogs.

I'm starring this post now. We love tacos and that will make a great alternative.

Chick Fil A salads or a salad from Chipotle (minus the dressing!) are probably my favorites from fast food places.

@SamI love that it doesn't use tortillas. It's something different and you still get the good carbs from the rice. Chipotle is SO good. We don't have one near us so we miss the one we used to go to!

I need to make these! I have never, ever thought of putting ground turkey or beef into the crockpot and using it for tacos. Great idea.

Can I just say I wish I had a trainer???:)

Those tacos look delicious. I love the crockpot idea. My favorite fast food meal is a chicken taco salad from Moe's (no shell, no rice). I love their chicken!

Those lettuce wraps look delicious! I love dinners from Zoe's Kitchen.. most of them are really healthy and delish! If I go to Chick-Fil-A I order the chargrilled chicken combo - yes I get the fries! A girl's gotta live.

I need to make taco lettuce wraps! They are very gluten-free friendly and comforting. I need something like that right now.

I love Taco Cabana's Black Bean taco. At chick-fil-a I usually get the carrot raisin salad and some of their killer lemonade (i do half diet, half regular), as it isn't the most vegetarian friendly restaurant around. My kids love their nuggets and waffle fries and I happily eat the remaining fries.
