Ok I didn't totally fall off the face of the Earth. Maybe just a little. I looked back on some of my recent blog posts and I've noticed something. Carbs and cheese are creeping back into my meals. This may explain why I've felt so blah and why my weight hasn't moved. I feel much better if I have a higher protein/veggie content in my meals. I'm definitely not a big meat eater so it is a little surprising that I feel better that way.
So today I started from scratch again. Avoiding carb overload and avoiding cheese on everything.
Breakfast was a coconut protein pancake adapted from Carrots N Cake.
In the cake- 1/4c kodiak cakes pancake mix, 1/4c egg whites, 1/2 mashed banana and 1/4t coconut extract
Toppings- 1T peanut butter and 1t unsweetened coconut
Rolled up like a taco! I see a lot of these in my future! That pancake was one of the best I've ever made! Infact, I might even start using the egg whites on the kids pancakes to get that extra kick of protein in.
For lunch I used up the rest of our spring mix for a salad.
Greens, leftover roasted sweet potato and carrots, and an apple chicken sausage. I whisked together 1t dijon mustard, 1t evoo, and 1t balsamic for a dressing. NO CHEESE... and I didn't even miss it.
After lunch I was bored so I snacked on grapefruit.
I'm not a fan of grapefruit unless it has sugar all over it.
For mine I used Truvia which was perfect.
It really tastes like sugar but I really don't know how natural it is.
I'm so confused with sweeteners.
I can't afford the calories in honey, agave, and maple syrup so I'm stuck using something calorie free. Which is ok because I rarely ever use it. Maybe once a week or so.
I tried the NuNaturals Stevia....
BLAH. It was awful with such a bad aftertaste!
What sweetener do you use?
