Pinteresting

Last night's dinner was simple and got a little help from our freezer.

There are two things I always get if we order chinese food. Steamed dumplings and crab wontons.  So unhealthy!  Forget the veggies I'm going for the gooood stuff!  I've had to compromise a little and those potstickers do the trick.

I made fried rice with brown rice and liquid amino acids instead of soy sauce.

Plus I steamed some edamame.

I loved it, my husband loved it, and the kids gobbled it up!

When the kids went to bed I made some steel cut oatmeal using a method I saw on pinterest,

Basically you bring the water and oats to a boil, let them boil for 3 minutes and spoon it into ball jars.  Leave it on the counter overnight.  The jars actually sealed themselves which was pretty cool.

This morning I met with my trainer and had a mug of coconut tea and a protein shake beforehand.

I do like tea..... But I really really like coffee.  It was missed this morning.

When I got home I made a jar of oatmeal.

After you let it sit on the counter overnight you either put it in the fridge or microwave it for 2-3 minutes.  I added almond milk, banana, maple syrup, and almond butter this morning.  It was delicious.  I've never had steel cut oatmeal before.  I love it!

I'm making something on the heavier side for dinner so lunch was light.

Salad with greens, red pepper, cucumber, and french dressing.  Plus cheese, crackers, and a pickle.

Dinner is a pinterest recipe too!  I am so addicted to pinterest.

I'm on Pinterest - so wish I could have invented it! Loving what you are having for dinner, one of my all-time favorite meals.
