
I think the secret to the taco mixture is tomato sauce. It keeps the turkey burger moist.

The concept is simple. Mix 1lb of lean turkey burger, 1 cup of tomato sauce, and 1 tablespoon of taco seasoning into the crockpot and set on low. I make my own taco seasoning and freeze the rest of the tomato sauce for later.

Let it cook for about 6 hours. I stir it occasionally.

About an hour before we eat I add 1 cup of cooked brown rice. You don't have to add this but I like the added carbohydrate.

Fill boston lettuce leaves with the taco mixture and then add taco toppings.

My favorite toppings are cheese, avocado, and salsa. You could even do jalapeƱos, olives, sour cream, ranch dressing, or taco sauce.
Then roll it up and eat it like a taco.

They are so fresh and delicious!

Turkey Taco Lettuce Wraps (in the slow cooker)
Ingredients
1lb lean turkey burger
1c tomato sauce
1T taco seasoning
1c cooked brown rice (optional)
1 head boston lettuce
your favorite taco toppings- cheese, avocado, salsa, sour cream...
Directions
Mix 1lb of lean turkey burger, 1 cup of tomato sauce, and 1 tablespoon of taco seasoning into the crockpot and set on low. Cook for about 6 hours stirring occasionally.
Optional- About an hour before serving add 1 cup of cooked brown rice and continue to cook on low.
Meanwhile wash the lettuce and break off the leaves. Also, prepare your toppings.
Fill boston lettuce leaves with the taco mixture and then add taco toppings.
Roll it up and eat it like a taco.

These look great! Gluten-free too! I'll have to try making the meat on the crockpot one of these days when I don't feel like cooking after work.
I've never made the meat in the crock pot but it's a great idea! Those look so delicious and you're right... the best part is all of the toppings!

Looks great! I love doing lettuce wraps--I often find that the density and bland taste of tortillas take away from the bursting flavor of the fillings! Crunchy lettuce is much better.
This makes me realize that I really need to invest in a crockpot!!! :)
