Tofu Fail

     
Dinner last night was fabulous!

Grilled shrimp marinated in Mama Peas tofu dipper marinade.  I could probably drink that marinade.  It's so good!

Plus sauteed spinach and roasted carrots.

See the low carb thing going on?

I felt satisfied but about an hour later I wanted something sweet.  I've been making these cookies in a cup and they are so good.  I haven't nailed the recipe down just yet but I love these the way they are.



1T buttter melted in a mug

Add:
1t sucanat
3T whole wheat pastry flour
1/4t baking powder
1T chocolate chips


Nuke for 30-40 seconds

It's a little dry and crumbly so that's why I'm still working on it.

It is amazing though eaten like cereal!


A splash of almond milk...

Mmm hmm...

Monday morning started with a green smoothie!


1c almond milk
2 scoops of protein powder
1 big handful of spinach
1/2 banana
1T peanut butter

TO GO!


I did 45 minutes on the elliptical at the gym and then snacked on two clementines and a sprinkle of cashews.


Lunch was random... I was trying to make Mama Peas tofu dippers but they were so bad.  The tofu never crisped.  It was the first time I've ever made tofu and probably my last.  I don't know what I did wrong!  I pressed it and everything.

I just threw together a salad.  Greens, ham, red onion, chopped sweet potato fries, and hummus dressing.  Plus a pickle!

For the dressing I just mixed a tablespoon of hummus with a teaspoon of almond milk.  I can't believe I haven't done that before.  It was SO good!

I've made cake in a cup before, but never a cookie. I really need to try Mama Peas' dressing!

I've never heard of a cookie in a cup, but I'm all over that bad boy!
For the tofu, it took me a really long time to get the right texture. How long did you press it? How high was your oven?

I still have not perfected the tofu thing either. But I've only tried a couple times. I like doing it at more like 375 for a longer time because I think it dries the center out more. I don't like the mushiness either.

I've never heard of a cookie in a cup but it sounds like something I could get into!!

And if you do try making tofu again, I've found that turning the oven to broil for the last 5/10 mins really helps it to crisp on the outside! Also, although it's not the healthiest cooking method, if you fry tofu it gets nice and crispy!
